Description General description Alcalase® is a serine endopeptidase that consists primarily of subtilisin A. Application Alcalase® Enzyme, Bacillus licheniformis has been used in the proteolytic digestion and extraction of polysaccharides in various sponge species. It has also been used as an endoprotease enzyme in enzymatic hydrolysis for the production of fish protein hydrolysate. Biochem/physiol Actions Alcalase® is suitable for the hydrolysis of proteins with an optimal pH of 7.0-8.5. It is used as an additive in detergent, dehairing, and bating leather. Alcalase is also used in meat tenderizing, cheese flavor development, baked manufacture, and improving the digestibility of animal feeds. Commercial Alcalase® comprises a liquid enzymatic preparation containing 50% glycerol, 41% water, and 9% protease extract from Bacillus licheniformis. Warning Toxicity: Harmful (C) Unit Definition One unit is defined as the amount of enzyme that will release 1.0 µmol L-tyrosine from hemoglobin per min at 25°C, pH 7.5. Reconstitution Please refer to the vial label for lot-specific density. Legal Information Alcalase is a registered trademark of Novozymes Corp. CALBIOCHEM is a registered trademark of Merck KGaA, Darmstadt, Germany
Q1: What is Alcalase® enzyme used for? A1: Alcalase® is widely used in protein hydrolysis, detergent formulations, leather processing (dehairing and bating), meat tenderizing, and improving the digestibility of animal feed. Q2: What organism is Alcalase® derived from? A2: Alcalase® is a serine endopeptidase primarily composed of subtilisin A and is extracted from Bacillus licheniformis. Q3: What is the optimal pH range for Alcalase® activity? A3: The enzyme works optimally at pH 7.0–8.5. Q4: Can Alcalase® be used in food applications? A4: Yes, it is used in food processing for cheese flavor development and baked goods, but only under regulatory guidelines. Q5: Is Alcalase® enzyme hazardous? A5: It is labeled as harmful (Toxicity: C). Appropriate handling and safety precautions should be followed. Q6: What is the unit definition of Alcalase® activity? A6: One unit releases 1.0 µmol of L-tyrosine from hemoglobin per minute at 25°C, pH 7.5.
