Lecithin from Soy, Refined, is a natural mixture of phospholipids consisting of phosphatidyl choline, phosphatidyl ethanolamine, and phosphatidyl inositol. In soybean lecithin the predominant fatty acid is polyunsaturated linoleic acid, amounting to about 70% of the fatty acids present. Lecithin is used for preparation of vesicle suspensions commonly called liposomes or as monolayers. A major structural phospholipid in brain, comprising approx. 15% of total lipid; primarily localized to gray matter.
